MATCHA
At micuppa, matcha is a discipline. We choose each grade for its purpose, delicate for the bowl and deeper for the latte, mind the water to the degree, and whisk every cup to order. After more cups than we ever imagined whisking, across two cafés in Panama full of familiar faces, we have come to understand what makes matcha work, in the cup and behind the bar. And yet all that precision serves something simple: a moment that belongs only to the person holding the cup. This is micuppa.
